Before Ruby Chow opened her own establishment, she tended bar at the Hong Kong restaurant, a 1910-built building on Seattle Chinatown’s Maynard Avenue. The restaurant closed in the early 1980s and has remained vacant ever since. The Wing Luke Asian Museum now owns many of its artifacts. (Deran Ludd collection.)
